Horseradish Mashed Cauliflower

1 head Cauliflower
Olive Oil Cooking Spray
1 Clove Garlic
1 Tbsp Butter
2 Tbsp White Horseradish
Salt, Pepper to taste

Remove outer leaves from head of Cauliflower. Spray with olive oil cooking spray. Place on baking sheet and Roast at 425 for 20-30 minutes, until Cauliflower is starting to soften.

Remove from oven. Cut into several large pieces, and place into food processor. Pulse until broken apart -- Cauliflower should resemble Cous-Cous.

Pour puree into mixing bowl. Mix in butter, stir around to melt and coat. Add salt, pepper, and horseradish. Mix well.
